Easy Chili

That was great recipe for when you have lots of prep time. Here is a great simple and fast recipe that you can make cheap and easy. 

First you need meat. So I went with a perfect budget cut; a beef shank.

Beef shank is a cut of leg meat that includes a section of the bone. It is considered a cheap cut of meat. You wouldn’t grill beef shank because it’s a frequently used muscle. Leg meat is tougher and has a lot of connective tissue. It’s quite budget friendly at $4 a pound. 

But beef shank is ideal for a slow cooker. The fat and connective tissue melts out, along with the delicious bone marrow, leaving a rich, soft, meat similar to potted beef roast. 

DIRECTIONS:
-Rub beef shank with oil, garlic salt, and pepper. 
-Lightly oil the bottom of your crockpot and place the shank in.   
-Add 1/2 cup Goya Sofrito base
-Add 1 can Goya chipotle peppers in sauce, 1 can kidney beans drained, 1 can corn undrained  


-Add 1 diced onion

-Stir everything up and cook for 8-10 hours on low. 

-When it’s done, fish out the bone

This chili would be awesome with some shredded cheddar and a dollop of sour cream on top. 
I used Scoops to eat it instead of a spoon
