Swamp Chili
With the temperature dropping as fast as the leaves here in the northeast, it marks the changing of the seasons. It goes from grill season to crockpot season.
And nothing warms your innards like a hearty chili.
Recently I competed in a chili cook off. Here is my first place winning recipe.
3 meat chili
-1 pound ground beef
-2 pounds venison loin
-8 strips of bacon
-1 can black beans
-1 can kidney beans
-1 can corn (undrained)
-1 can diced petite tomatoes w/ chilies
-1 can diced tomatoes w/ cilantro + lime
- 2 cups beef broth
-1 red bell pepper
- 1 poblano pepper
-1 jalapeño pepper
-1 white onion
-1 bunch green onion
-2 stalks of celery
-liberal amount of chili powder and seasoning
DIRECTIONS
Dice bacon and fry in a Dutch oven. Remove bacon pieces with slotted spoon and pour out 80% of the grease from the pan. Add cubed venison loin and ground beef to pan and brown in bacon grease for 5 minutes. Add onions and peppers and cook another 5 minutes. Pour the meat mixture and fried bacon into your crockpot. Add all remaining ingredients. Cook on low for 8-10 hours.
