Crockpot Whore: Greens N Beans

 I put a Yankee spin on a southern classic. 

INSTRUCTIONS:

Everything starts with a meat. This is the base flavor 

I went with pork neck, a fatty cut that’s not good for much, but works great in soups or a slow cooker 


Next I add 1 onion and 1/2 a red pepper diced



I added 1/4 cup Sofrito base and a can of corn undrained 


Then a heaping spoonful of garlic and a liberal dose of Old Bay hot sauce 


The final ingredient in our flavor base is two spoonfuls of jalapeño pepper jelly

Turn crockpot on high for 1 hour then low for 5 hours 


After 6 hours, stir everything around with a slotted spoon and remove the bones


Add 1 can blackeye peas and the other 1/2 red pepper 

And one bunch of collard greens, washed and cut off the stem. The stem is very bitter

Season with salt and pepper and cook an additional 4 hours

You will be left with a delicious bowl of goodness 


I topped it off with a few more dashes of hot sauce and dipped corn chips in it.
