Lazy Countryman’s Pierogies



 

Here is another crockpot meal that takes little prep work and inexpensive ingredients. 

Today I’m making a western New York favorite; lazy man’s pierogies. Who wants to take the time to make perfect like dough pouches when you can slop everything into one pot?!?!

Lazy man’s pierogies are a warm salad. A pasta dish, that’s fully customizable. Here is my take. 

Start with a budget meat. I chose country style ribs. They aren’t actually ribs. There’s no bone. It’s the ends of the loin where it meets the shoulder. Great for slow cooking. It melts into pork perfection. 

Season the pork and place in the bottom of your crockpot  

Next add a jar of drained sauerkraut. Be sure to save the jar. Place it in warm water to soak the label. 


Add mushrooms 


Add 1/3rd pound ground beef and season meat with salt and pepper



Pour 1 can of cream of potato soup on top of that 


Add one cup apple sauce 

Turn your crockpot on low for 8 hours. You’ve built this in layers for a reason. Let it cook for 4 hours before you stir it. The pork and kraut will cook together and helps break it down. 

When there’s only 30 minutes left add 2 cups spiral pasta or egg noodles and a few cubes of cheese. I used pepper Jack 



Let it sit for an little bit to set up. In the meantime scrub the label off your sauerkraut jar and wash it out with hot water. Fill the jar with a dark German beer and garnish with Lil Dutch Maid lemon cream cookies. This will be dessert
