Swamp Potato Party

My family likes to do theme dinners, where they provide a central dish and everyone brings a side/toppings to accompany whatever the theme is. In the past it’s been things such as tacos/nachos, chili, soup, or pizza. This year it’s baked potatoes! Sounds simple, but you can do a lot with a tater. 

I’m making Cajun shrimp scampi twice baked potatoes

 

I will tweak my family recipe, adding onions, sweet red pepper, and hot Old Bay seasoning 

 

My sister is providing the baked potatoes, so I’ll bring the scampi, halve some baked potatoes , scoop out some of the innards into a bowl, mix it with scampi juice, put the mix back in the potato skin, top with shrimp, toss in the oven for a few minutes, and serve
