Scotch Eggs At The Cabin
It was a beautiful fall day, peaking around 73F, so after working a half day, I came home and packed up for a hike to my cabin. Hunting season is in a few weeks. Time to make last minute preparations and be sure my boom stick is on the mark.
I decided to make Scotch eggs. They are hard boiled eggs that are wrapped in sausage, breaded, then cooked. Traditionally, they are smoked. But today I’m grilling them with a red pear and cubanelle pepper. The recipe is easy, but involves a bit of prep.
you’ll need:
- 4 hard boiled eggs
- 3 raw eggs whipped in a bowl
- 1 cup flour
- 1 pound sausage, quartered and flattened into a patty. I used a mixture of Turkey and chorizo sausage
- 2 cups breadcrumbs. I used 1 cup panko breadcrumbs and one cup of crushed Doritos
DIRECTIONS
- roll hard boiled egg in flour
- wrap egg in sausage, like a meatball, be sure to seal the seams good
- roll meatball in flour
- dip meatball in egg, be sure to get full coverage
- roll meatball in breadcrumbs
I cooked them for 1 hour and 45 minutes on the grill, it was a camp grill so it isn’t super efficient. I kept turning them until all sides were crisp, then wrapped them in tinfoil for the last 30 minutes to be sure they were cooked through.
