Peach Mustard Glaze


 Everyone has heard of honey mustard. It’s just a combination of tangy mustard and something sweet. I like to make my own sweet mustard with whatever I have on hand. Honey, maple syrup, brown sugar, grape jelly, apple sauce…you can use anything that tickles your fancy. 

I’m making a glaze that I will slow cook on some beef top loin and diced pork loin. 

DIRECTIONS: 

Start by mixing your glaze. It’s 2:1 mustard to additive ratio (use twice as much mustard as sweetener)

Start with a quality mustard, not the cheap stuff 



Alstertor mustard is very rich and creamy with less tang. Plus it comes in a great jar that you’ll need for this recipe 


Now for something sweet. I went with peach butter

Fruit butter is ideal for this recipe 

-Mix 4 Oz mustard and 2 Oz peach butter

-Place pork in bottom of oiled crock


-Place beef steak on top and season with salt/pepper


-Cover steak with mustard glaze


-Remove the remaining mustard from the jar and store in a sealable container. Wash out the jar and fill it with one can of dark beer. 


-It’s an 8 0z glass, so you’ll have 4 Oz of beer left. Pour that in the bottom of your crockpot. Add a few vegetables and potatoes around the outside, and turn on high for 1 hour, then low for 4 hours. 


-After 5 hours, stir in 1Tbsp of flour to thicken the gravy. Mix everything around and turn to high for 1 hour 


-Remove lid and let food sit 20-30 minutes, then enjoy


 


I had some Ukrainian salad on the side. It’s a combination of cucumbers, carrots, peppers, and onions pickled in a sweet and zesty juice



Ingredients:

4 Oz mustard 

2 Oz peach butter

4 Oz beer

2/3 pound beef steak

1/3 pound diced pork

2 potatoes

1 parsnip 

1 tbsp flour


Total cook time: 6 hours
